Integral part of South-East Asian cuisine, soy sauce is a liquid condiment of Chinese origin. Soy sauce is made by fermenting soybeans by a process called hydrolization. This process discharges sugars that build up the brown colour for which soy sauce is known. Soybeans are cooked to soften the bean, and then microbial cultures are added to initiate the fermentation process. Roasted wheat or other grains and additives are added to provide a unique flavour. The mixture is then mixed with brine and allowed to ferment for period. After the fermentation, the mixture is filtered to extract the dark brown liquid which is bottled and packaged as soy sauce.
